Chocolate Eclair Cake

1 box graham crackers

3 cups milk -- I usually use skim or 1%, soy and almond seem to prevent it from really setting up.

2 boxes vanilla pudding - I use sugar free

8 ounce carton Cool Whip - regular works best, but can use sugar or fat free.

1 container chocolate frosting

Grease 9 x 13" cake pan (I use pan spray). Line 1 layer with whole graham crackers. Mix pudding and milk for 2 minutes. Fold in Cool Whip. Spread half of this mixture over graham crackers. Layer another layer of whole graham crackers. Spread the rest of the pudding/Cool Whip mixture over
graham crackers. Then add a 3rd layer of graham crackers. Refrigerate for one hour. Then frost with chocolate frosting.

Not recommended for freezing. Will store in fridge for a few days just fine.
