Skinny Chicken Parmesan Casserole

This turned out super yummy! The croutons on top really give it a little extra something....try it out!

Ingredients:

• 2 lbs. boneless, skinless, chicken breast – cubed
• 1 TBS Basil leaves
• 2 cloves of garlic, minced
• 2 cups marinara or pasta sauce
• 1.5 cups reduced-fat shredded Mozzarella
• 1/4 cup shredded Parmesan
• 3.5 oz. garlic croutons, crushed slightly

Directions:

Lightly spary a 9×13 baking dish with cooking spray. Place your raw cubed chicken in the bottom of the dish.
Top chicken layer with basil and garlic.
Add pasta sauce evenly on the top.
Top the sauce with your cheeses evenly.
Then top all of that with the croutons (I put mine in a ziploc bag, and crushed them with a meat tenderizer.)

Bake at 350 degrees F for 40-45 minutes.

Oh, and really... I never have fresh basil. I used a few dashes of dried basil.

Also, I only had about 1/2 cup of mozzarella cheese- but it was still yummy! ( that makes it more healthy right? )

Made this the other day and it was GREAT!!! DH even loved it--and he's not generally a fan of anything with red sauce :)
