Cheddar Ranch Chicken

INGREDIENTS:
4 boneless skinless chicken breasts
1/2 cup mayonnaise
2 tablespoons dry ranch dressing seasoning
1/4 cup grated cheddar cheese
1/4 cup panko
cooking spray

DIRECTIONS:
Preheat the oven to 425 degrees.
Place the chicken in a large baking dish.
In a small bowl, combine the mayonnaise, ranch, and cheddar cheese. Spread on top of the chicken breasts.
Sprinkle the panko on top and spray lightly with cooking spray.
Bake for 25 minutes or until chicken is cooked through.

This sounds tasty (but I'm not a fan of mayo so I'd probably sub in sour cream). I had to google panko - LOL. Do most grocery stores carry it, or do you have a specialty place you buy it?

Sounds yummy!!! Could you use breadcrumbs for the panko or are they pretty different?

Pretty sure I got panko at target. They are like Asian breadcrumbs and really low cal! (They are like the little crunchies that come on some yummy sushi rolls.)

I've seen it at Schnucks, with the other breadcrumb type things. I think it's usually in a box.

Do you think this recipe would work with Greek yogurt instead of mayo, or is this a calorie corner that shouldn't be cut?

Yup...you can find them near the breadcrumbs. (Panko is yummy on fish, too)

This is not my recipe, of course, but I have used another (Indian) recipe that recommended marinating the chicken with yogurt, so I think subbing Greek yogurt here would work fine. I'm not a fan of mayo either :)

You could sub anything for the mayo.

I wouldn't sub bread crumbs for panko unless they were non-seasoned. And really the panko is not needed...just ads a little crunch.

My hubs really liked this, and I will add, it was better day 2 (but not as crunchy :) )

I made this the other night and it was really good! I didn't have Panko but I had some ranch croutons that I crushed up and used and it worked out great!

I've made this a few times too! I love how easy it is. Oh, and I've made it both with fat free greek yogurt and light sour cream - both were yummy! :good:
