Mediterranean Pasta Salad

Mediterranean Pasta Salad
  • 1 can quartered artichoke hearts drained (I even cut the quarters in half)
  • 1 can black olives drained
  • 1 lb box of pasta such as penne or rigatoni
  • 1 1/2 cups of Italian salad dressing (I used Pasta House Dressing)
  • 1/3 cup finely chopped red onion
  • 1 lb of chopped carrots (or buy the shredded carrots from the store to save time)
  • 1/4 cup sliced peppercinni peppers (drained)
  • 1 - 6oz package of feta cheese
  • 1 - 5 oz package of grated asiago cheese

  1. Boil pasta in large pan
  2. While cooking pasta prep/chop vegitables
  3. Drain pasta and rinse in cool water
  4. In giant bowl (or 2 gallon ziplocks) combine all the ingredients and mix well.

Note: this makes enough to fill 2 gallon sized ziplocks so it's a lot of food, but great for large parties and the leftovers aren't bad either ;)
