Chicken Tortilla Soup

1 rotisserie chicken, shredded (or cooked chicken breasts, seasoned to taste and shredded)
2 Tbsp Olive Oil
2 Garlic cloves, minced
1 yellow onion, diced
2 cups frozen corn
1 can black beans, drained
1 can rotel
1 cup tomato puree
2 cans chicken broth
2 tsp cumin
1 tsp salt
1 tsp chili powder
1/8 tsp cayenne pepper

Heat oil over medium heat. Add garlic and onion and cook until soft (approximately 3 minutes). Add corn and cook an additional 2 minutes, stirring occasionally. Stir in rest of ingredients. Heat to boiling. Reduce heat and let simmer 40 minutes.

This is SO yummy :) One of my favorite soups to make and take for lunch for the week. It can also be made in the crock pot. I like to top it with a bit of sour cream, shredded cheese, and tortilla chips/strips.
