Cheesy Chicken and Veggie Soup

I concocted this yesterday afternoon when I wanted a crockpot dinner and for something randomly thrown together... It was GOOD.

About 18oz frozen boneless, skinless chicken breasts (I used tenders so they would cook faster)
Two bags frozen California Blend Vegetables (Broccoli, Cauliflower, Carrots - I used half a giant bag from CostCo)
1 can Ro-Tel tomatoes
6 cups fat free chicken stock (I used half bullion, half prepared stock)
Pepper and Garlic
Cook on High for 3-4 hours
Shred Chicken and use potato masher (or immersion blender) to break everything into little bits
Stir in 16oz 2% Veleeta Cheese, cubed - allow to melt
Stir in 2 Tbsp dissolved corn starch

It stays fine in the crockpot, so serve anytime after the cheese is melted in.
Makes 13 cups
4 WW Points+ per cup

that sounds really yummy and I love that it's a crockpot meal and pretty healthy!
