ISO: Baked Potato Soup Recipe

Anyone have a great potato soup recipe? I'd like to make it for Christmas Day lunch with salad. Thanks!

'Tis not fancy, but my MIL makes a mean potato soup. I love it, but DH hates it. So sad!

-1 stick butter
-1 quart half and half
-1 - 2 cups milk**
-1 bag Ore Ida Potatoes O'Brien
-Chopped bacon or real bacon bits
-Cheddar cheese

Melt the butter in a pot, and then whisk in the half and half and milk. Bring to a boil, then add potatoes. Simmer for 30-45 minutes. Add bacon bits and simmer for another 5 - 10 minutes.

**Depends on how thick you want the soup to be! I like mine thick, so I use less. :)
