Buttermilk Pancakes

Buttermilk Pancakes
  • 1 cup buttermilk
  • 1 cup flour
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda

Directions:
  1. Add everything but the salt and baking soda, and mix well.
  2. Add the baking soda and salt and stir (over stirring the salt and soda will make flat pancakes).
  3. Use cooking spray on non-stick pan. Place on stove with low heat.
  4. Spoon in pancake batter. You’ll notice they rise a lot before they’re ready to flip.
  5. When both sides are golden brown serve with maple syrup.


Other favourite toppings include: frozen (and thawed of course) strawberries or blueberries.
Other possible additives to the batter include: bananas, pecans, blueberries, or chocolate chips.
If you're craving spice, try adding 7.5oz of canned pumpkin + cinnamon, ginger, nutmeg and allspice to taste.

Substitution:
If you don’t have buttermilk, you can use 1 Tbsp of lemon juice + enough milk to make it 1 cup.
If you do this, add an extra 1-2 Tbsp of flour to thicken the batter a little more.
