I'm a couple weeks behind posting, but what's on your list this week?

Monday - spaghetti, salad
Tuesday - maple glazed salmon, peas, potato wedges, oranges
Wednesday - chicken enchilada casserole, rice, salad
Thursday - vegetable chili, cheddar drop biscuits honey dew melon
Friday - chicken cilanto soup, breadsticks, oranges
Saturday - Shrimp & sausage skillet, salad, pineapple

Sunday- Pork loin & roasted broccoli
Monday- Pizza & salad
Tuesday- Parmesan crusted tilapia & roasted asparagus
Wednesday- OUT to celebrate DH's promotion at work :yahoo:
Thursday- Avocado chicken salad sandwiches & butternut squash "chips"
Friday- Chicken taco chili over rice
Saturday- ?

s: beer cheese sloppy joes, pretzel rolls, brussels sprouts
s: deconstructed manicotti skillet with zucchini noodles, cheese garlic toast, caesar salad
m: beef stroganoff, peas
t: crock pot potato soup
w: garlic parmesan zucchini noodles and spaghetti, cheese garlic toast, asparagus
r: chicken pesto bake, caesar salad

S- I really didn't plan well this night...we were out of the house most of the day for an open house..we ended up having breakfast for dinner. kids had cereal and I had eggs :)
M- Crockpot Chicken Tacos/salad, with black beans and corn
T- Meathloaf, sweet potatoes, zucchini
W- Pork tenderloin, Green beans
T- breakfast...eggs, sausage, fruit
F- pizza and salad
S- out

Can I get this recipe? Also, how are you liking your spiralizer? I still have only made the one dish with it but my DH LOVED it.

Sure! We use this one.
1 pound of ground beef
1 onion, chopped
1 tablespoon flour
1 cup beer (we use Yuengling, but obviously use your fave!)
1 cup Cheddar cheese, shredded
Chopped chives to garnish
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
Burger Buns (I use pretzel buns - Costco has the best ones, but they aren't always available)

In a large skillet over medium-high heat, brown your ground beef in a tablespoon or so of EVOO. Once browned and crumbly, add in your chopped onion and a generous pinch of salt and pepper. Saute about 4 minutes. Sprinkle your flour down over your meat and onion mixture and then slowly pour your beer in the pan. Reduce heat to low and stir the beef and flour together until it starts to thicken a bit (about 3 minutes). Add in your shredded cheddar cheese and stir until melted (about 3 minutes).

Oh! And the spiralizer. Still in the box. I planned two meals with it this week, but our schedule is all thrown off because DH has been sick. Again. Man sick. Ugh.

Sunday - leftover pizza from my son's birthday dinner
Monday - Pioneer Woman's sour cream noodle bake
Tuesday - cream cheese chicken enchiladas
Wednesday - burrito bowls
Thursday - tatortot casserole
Friday - leftovers
Saturday - grilled cheese, spinach and mushroom orzo

I tpypically eat a spinach salad as my side and dress it up with tomatos, carrots, etc.

I stocked my freezer full of freezer mills last week so I'm enjoying a little less cooking time!

Mon - Teriayki meatballs, brown rice, broccoli
Tues - Orange beef stew, peas/carrots on side since boys don't eat a lot of potatoes, biscuits
Wed - Spaghetti and meat sauce, veg
Thurs - Pizza
Fri - Italian meatloaf muffins, baked potatoes, mixed veg
