Sunday - Out to dinner
Monday - buffalo wings, celery sticks, roasted carrots & cauliflower
Tuesday - homemade pizza, green salad
Wednesday - lemon chicken, spaghetti squash augratin, roasted broccoli
Thursday - crockpot chili (parents get in Thursday morning)
Friday - Roast, carrots, potatoes & onions for grandparents & kids, dinner out for DH and I. YAY date night (first one since AUGUST!)
Saturday - Thanksgiving.

s: grilled cheese & tomato soup
m: crock pot chicken pot pie
t: pizza casserole, green beans
w: crock pot chicken lasagna florentine, asparagus, cheese garlic toast, caesar salad (we're having friends who just moved to Charlotte over!!)
r: crock pot potato soup
f: leftovers, out, something else will get bumped ;)

Of course!

Chicken Pot Pie:
2 frozen chicken breasts
2 cans condensed cream of chicken soup
4-5 medium potatoes, peeled and diced
2 cups frozen vegetables – we use broccoli / cauliflower / carrots / peas / whatever
Salt and Pepper to taste
1 cup shredded cheese
2 pie crusts
1 egg white

In crock pot, combine chicken breasts, potatoes, frozen vegetables, cream of chicken soup and mix well. Add additional salt and pepper if desired. Cook on low for 6-8 hours until chicken is fully cooked. Use a sturdy spoon to break up the chicken after cooking. Preheat oven to 400. Prepare pie crusts. Spoon chicken filling into pie crust. Top with shredded cheese. Top with pie crust. Cut slits into the top crust to vent steam during baking. Cut excess crust from edges and pinch to seal. Brush with egg white and bake for 20-30 minutes until crust is fully cooked and golden brown on top.

And Crock Pot Chicken Lasagna Florentine - we've been using rotini or whatever we have on hand instead of lasagna noodles. The lasagna noodles are just too chunky, even when you break them up; they end up not cooking evenly. Oh! And I usually add extra chicken broth to this one, maybe even a whole extra cup. Otherwise it gets really dry. This is another one that makes leftovers for days!

Mon: Toasted Ravioli and Garlic Bread
Tues: 8-can soup and bruschetta
Wed: Homemade Vegetable Soup and Bruschetta (we still have more ingredients left from last night and it was good so I figure why not :laughing: )
Thurs: Leftovers
Fri-Sun: Fend for myself while DH hunts
